Urban Pilón is really Thankful for the opportunity given today sharing the kitchen with the graduating class of Albizu Campos High School. As we seen today some students really have it in their DNA to cook. I am really hoping that our experience could be a stepping stone for a future filled with great cooking for them. Today we had so much great food..We had Salmon Ceviche as an appetizer. Caribbean style collard greens with sweet potato as a side. Mofongo with Fricase de Pollo (Caribbean style chicken reduced in wine), and a fruit salad with roasted coconuts and almonds. To drink we had passion fruit (parcha) lemonade.
